Malaiyo is a Banarasi winter speciality: milk whipped into a light foam, flavoured with saffron and cardamom and topped with nuts. It is traditionally left out overnight in the cold and sold from early morning until it runs out.

Look for it from street sellers in the lanes of the old city around Chowk and Pakka Mahal between roughly November and February. Outside the winter months it is not made at all.
